I used to collect:

Baseball cards, tons and tons of them. Think the crown jewel is 2 Piazza Rookie Cards (which is sad)

Pogs (those are those "caps" things referenced earlier)

Stamps for a very very short stage in my childhood

Video games, i never throw anything out

....
Does gear in WoW count?

Ninja Turtles (big surprise). I don't really actively buy stuff anymore, but I have several large "rubbermaid" containers full of figures, puzzles, everything.

Comics. Again, not really buying them anymore, but I have a pretty fair collection. Mostly Superman (around the time of the "Death of Superman" arc) and Spider-Man. And Flaming Carrot.

Heroscape. Great fantasy/war miniatures game. I have way too much of it.

Don't really collect things anymore, but when I was younger I collected....

GI Joes - I would wage wars and find ways to destroy the hell out of them. Break them and then make mutants out of the remaining pieces.
A few WWF action figures with signature moves and the ring
baseball and basketball cards, which the best ones were stolen
M.A.S.K. figures
I had some Voltron and Thundercats figures, can't remember if I catually collected them.

Currently I seem to be collecting liquor bottles, but not intentionally.

Did you ever have the Turtle van or the blimp? Those were two things I wanted as a kid but never got.

I had the blimp. :P
Also had Raph and Mikey, though not at the same time.
Raph was bought along with the blimp. I lost him so Mikey was bought for the blimp to have a pilot.

What I wanted was the van and Shredder, which I didn't get.

I don't have any of my jerseys framed but there's a couple I don't wear, choosing to just keep them as collectibles.

Lots of video games, all the way back to the SNES.

Vintage coin collection

Tons of MP3s (not that big of a surprise)

Cars - A collection in progress... aka, I can't sell the junkers I have

Pokemon cards - I still have all the holographic ones somewhere. I threw out all the others 5-6 YEARS ago and they still keep popping up randomly.

Beanie Babies - I have tons of these things from back when they were all the craze. Right now they're sitting in garbage bags in a storage building behind my house

I am sure that I'll have a pretty massive collection of junk when I die. I have a hard time parting with things when I can just rationalize boxing it up and storing it.

I actually have two vans.. never got the blimp. That's actually the only vehicle (from the original cartoon) that I don't have.

I forgot Ghostbusters, I had tons of those too. And colorforms.
