Even though I share everybody's frustration that live 08 is basically 07 with a new layout, I think there is a few good things to say about the newest edition.

For one, I'm glad they made the controls more keyboard friendly - it feels so good to be able to post up and make the pro hop again - and it's fun to actually do some of the fss tricks you couldn't do on a keyboard last year. I like the idea about having NT's as well. It also seems like they fixed the pg domination issue, and obviously it's nice they got the substitution mechanics right this time.

but...

The more I play it, the more small oversights and errors I notice. And stuff that's just weird. FOr example - why aren't all the legends in the legends pool? Why can't I use legends or nt players in individual practice? Why haven't the rookies and NT-players got portraits? why is there so many rookies missing? Why is the rosters so out of date, even with the the obvious production delay in mind? Why is Eddie Griffin a FA in the game? Why doesn't team USA use their actual roster? Why can't I use the triple threat position like in previous lives? Why does the hotspot key have to be the same as one you use all the time during normal gameplay? Why isn't there an intro? Why is the layout in the main menu so.... lame?

All of these things just strikes me as peculiar. Individually, none of them are a big deal, but collectively, they make the game seem like such a piece of amateur work. I mean, lot of this stuff will be fixed by the patchers from this site, but wouldn't it be in EA Sports best interest to have it fixed from the start? Why don't they just throw a couple of thousand dollars in the direction of some of this site's patcher's, and make them look the game through and do theur thing BEFORE the game is released for once?

I can't answer all of those questions but when it comes to the rosters, the early cutoff is responsible for a lot of the issues you've raised.
