the adding of separated buttons, the removing, then adding again, then removing again shows me that there was not detail planning at all.

They didn't add and remove seperate buttons that many times. The dunk/layup button was added in NBA Live 2004 and utilised again in NBA Live 2005 and NBA Live 06. The change was made to seperate the controls further into a dunk and layup button in addition to the shoot button in NBA Live 07 and now they're going back to a single dunk/layup button in NBA Live 08. That's only two changes since the concept of seperate shot buttons was first adopted.

As far demonstrating that there was no detailed planning, I don't think that's necessarily the case. To me it seems more a case of trying something that didn't pan out as they hoped and going back to a method that most fans seemed to prefer. I guess you could argue that the decision to have a dunk and layup button in NBA Live 07 was a bad idea from the start depending on whether you liked the concept or not but the decision to abandon that concept would seem to be based on consumer feedback, which is after all what we hope for year in and year out. One would hope they'd re-evaluate aspects of the games that aren't working as intended and replace them with a preferable alternative.
