Is it possible to override created teams' jersey and stadium. If yes, how? ...appreciate sensible replies

by override do you mean edit? if so then yes. files for created teams and jerseys start with 1000 and up. you can open those up using mod tool and export the textures in order to edit them. hope this helps.
