Need help with controlling

I have many questions aboout the game but I cant really remember so here´s the first:
I cant use the replay function. I can go into it, play with the cameras but I cannot play/pause/rewind and so on.

EDIT: Another question: How to do the behinf the back move? post+crossover or speed+crossover? And if he has it in his left a have to start at 9 o clock and go counter-clockwise right?
