If you mean reducing the resolution of a jersey patch, I believe you can do that fairly easily when you edit the .fsh file with FshEx.
If you mean getting rid of a 2x jersey patch then it depends how it's installed. If it's a .viv file that has replaced the original, you'll need to restore the original file by copying it from the NBA Live 08 disc or reinstalling the game. However, if the jersey update is just a .fsh file that is "loose" in the sgsm folder, all you need to do is delete the file from sgsm and the game will load the default art from the .viv files.
