Where it says generally the higher the grade, the more ratings will be impacted by a coaching session, what does that mean?

It means coaches that are rated higher (eg have the highest grades in each category) will allow you to see greater improvement in your players from a single coaching session. Put simply, a coach with a higher grade will achieve better results than a lower rated coach.
