i want to say it has something to do with using a 512x512 texture for the face instead of a 256x256 but I'm not 100% sure

From memory it is a 2x patch issue, most likely the skin/tattoo files. It's been brought up several times before, a search for "white gloves" here in the NBA Live 08 section (or possibly the NBA Live 07 section as well) should yield more info.
