A Hex Editor (HxD is a good free one) is probably your best bet.

I'm pretty sure there is a Doron Lamb face around somewhere; I've got one ready to use with the upcoming roster update though I don't have a link handy. A search in the Downloads section or here in the NBA Live 08 section of the Forum should yield one, though.
