Ok new problem...

I updated rosters to include Jordan, Pippen etc...but now Toni Kukoc is nowhere to be found...I assume he wasn't included in the update because he don't play...but how do I put him back in?

Kukoc isn't in NBA Live 08's default rosters. There's an entry for him that seems to be part of an abandoned classic teams feature but as far as I know, no player art exists. However, he was in the default rosters for NBA Live 07 so you could just extract his face from there and use it with NBA Live 08.

To add him to the active rosters, all you need to do is change his TEAM to 50 in the database so that he can be signed from the Free Agent pool.
