Can I erase a file (.ebo hair, or .ebo head) that I have in the plyrgrb.viv?

I'm not sure that you can without causing problems. The best solutions would be to:

1. Restore from a recent backup, reimporting other files as necessary
2. Important replacement .ebo files over the top of the ones you want to get rid of.
