Yo, I know exactly what your going through and I've always had the same problems with Madden. You want to have the most realistic and challenging experience, and the sliders can help you tailor that to your play style. However, you don't know if changing the sliders is going to fix the problems and then you don't know if your are beating the computer because its gimped by sliders or because you are actually playing good. Then there is the issue that you don't know if your are getting picked off alot because the defense is playing good, its a fluke, or because the interception ratings of the defense is just too high.
The problem with all of this is that you have to know the fundamentals of the game like your asking for in order to decide what area of sliders needs to be fixed. This is especially the case in Madden, where if the computer is consistently abusing your defense in the passing game, you may be able to just fix it by tweaking the pass blocking and qb accuracy instead of messing with defensive awareness and pass knockdown sliders.
I think this is MUCH easily done in NBA Live probably because you will have less players and statistics and aspects of the game to take into account for each part of the game that is frustrating you. Its also easier to compare whether the player thats throwing bad passes or whatever is doing it because he's not that great of a player or because the cpu is just pulling bullshit steals out on you.
Also the NBA season is longer if you are doing a dynasty. I always went in and played a game in Madden then looked to see if anything was rediculously challenging and modified that slider by about 10 points. You have to play a couple games and see where your statistics stand after each game to see where you are getting burned the most. Then compare your team statistically to teams with simlarly rated players to see if they get robbed as many times as you do, and if they don't bump, that slider 5 or 10 spots until you get compareable results.
Another safe thing to do is to play in one of the offensive sets and memorize them so there is less guess work in where you are passing the ball and what other things you are doing on offense. This will make it less likely that your results are based on forced passes or forced shots. For example, I was throwing alot of picks in Madden, but it was probably because I was running the qb all around and throwing passes instead of taking sacks. When I had alot of picks, I was also usually the least sacked quarterback in the league.
With NBA there probably isn't alot of things like that you have to worry about. Its all pretty straightforward with trying to get open looks and get shots closer to the basket. Also mixing up the types of attacks and plays you run is also key. The NBA season is also long, so if you change a slider and you think that its getting too easy now because your getting better at the game, just start slowly lowering the sliders again until you hit the sweet spot.
