I've found that the following slider settings produce fairly good results on All-Star difficulty. They might also work with Superstar, but are optimised for All-Star level. If All-Star isn't challenging enough for you, I suggest reducing the user field goal sliders (short range, medium range, long range, etc) to 40.

If you run-and-gun and get lazy on D, you will have higher scores. But if you play good defense you shouldn't get unrealistic scores. If you play an up-tempo game, you should score around 105 ppg, or more if you really run and gun. If you prefer a slower paced, defense-orientated game, you'll find you get lower scores.
