Any way to revert to a previous game version?

I noticed today that debug menu options only work in the pause menu in an actual game. I'm guessing functionality was patched out by 2k, so I'm wondering if there is a way to revert back to a previous version before this update?

An older .exe file and putting Steam into offline mode should do the trick there.
