Anyways here's a preview of what I've been trying to do lately. I want to release this soon but, anytime I resize the head, the eyes seem to bug out. If anyone has any idea how to resolve this issue, please do message me.

Here's an image of the bug in-game. It usually occurs whenever he's looking up and to the right or left.

Yeah, this looks weird His headshape is awesome though Too bad I'm no modder, so I can't help you with the issue

try to select the eyeballs in Blender edit mode and move it a little bit on Y axis (you can input a negative low value on keyboard)
then you can check in the player edit menu in his signature (calm / angry ) then ingame.

select the eyeballs, resize it a bit and move it in wards. That's what i do.
