Xbox Live NLSC Game Night

So I know we have threads where we share our xbox live gamertags but we seem to just add each other and never actually play each other. The only two people I've really played with is pdub and melwing (we need to play some rb2 dude)
So I'm thinking once a week or so we should setup a NLSC game night on XBL. We play a predetermined game at a spedcial time.
So what would you guys want to play against each other, Halo 3 has plenty of game modes and whatnot, CoD 4 would be insane with the right people, NBA Live 08 has OTP...but if that failed for the finals this year no chance of really reviving it before the 09's come out.
So what games would you guys want to play?
PSN guys, I dont have a PS3 so I'm obviously not going to make a thread for you, feel free to make your own though.
