Does anyone know what the pixel size would be for a standard jewel case cd?

You can actually convert pixels to inches when starting a new document by clicking on the pulldown menu.

Chances are you want 300 dpi when making a jewel case. I suggest creating a new image and setting it to 4.75 inches x 4.75 inches (4.75 x 6 for the insert that goes in the back) and changing the resolution to 300 pixels/inch. That will give you a document that is 1425x1425 if I'm not mistaken.
