its something about the -0H hydroxyl chains making the isomers not collapsable in trans fat or oil and hence coagulating in the arteries isn't it?
i'm a genetic engineer, not a chemist but animal fats in adequate amounts is necessary for a healthy lifestyle. trans fat isn't good in any amount i don't think
have dark chocolate, dark beer (guiness stout's) and red wine to protect your arteries. a disprin or two daily neutralizes ph/ion charges and also has the opposite effect of thickening your blood therefore placing less stress on the heart muscle. excercise to get your heart beat higher than normal is good to keep the heart muscle conditioned
these things help counter the effects of trans fat, which is sometimes a diet which we have to consume because of lifestyle choices.
