i would say the entire end to unforgiven is one of my favorite scenes ever.
i like scenes in movies where someone realizes that they fucked with the wrong person, the scene above is one of those. another example would be the scene in gladiator when he realizes he is still alive
on the other hand i like scenes that are pretty close to all of hally berrys scenes in swordfish

So seriously, how do I cut a scene piece from a DVD?

Use VOBCut. That allows you to cut 'sections' from VOBs. Then you can use VirtudalDubMod to encode to DivX or Movie Maker, whatever. First you have to rip the shit to your hard drive.

I love that Pulp Fiction scene. Funny how right when I saw the title of the thread, that scene came right to my mind
