How can I create my own cover for games?

Sorry I tried to search for some info on this here but no luck!

Can someone please recommend me to a tutorial or info that will help me create my own covers for games such as Live 07, 2k7, etc. I know where I can get the template but its learning how to cut the players out, etc. Please give me any info you can and thanks you.
