Ok, I have a couple sports games on my PS2 but I don't have online for it. I noticed it does have a couple USB ports, so is it possible to save a roster update to a flash drive and then transfer it to the ps2?

This is a cool concept I never thought of and if it's possible I want to give it a try too.

You can't just put the file on your usb stick and load it just like with your memory card.
You need to have a CD to put it your PS2 with which you can transfer the files from the usb to your memory card.
