If you're using DB Commander, all you need to do is move to another cel once you've altered a value, then close the file when you're done.

but how do i do that??????

Click on a cel, edit the value, use the arrow keys to move to another cel. Once you're done editing, close DB Commander.

If you're editing a roster, I always recommend saving the roster and editing the appropriate dbf files in the save slot. That way you can easily re-load the changes.

No, there's no problems there. The changes will be saved automatically when you exit DB Commander. Just make sure that you're editing a saved roster file so that you can easily reload the modified dbf files.
