To perform a 360 dunk, you need to perform a 180 gather and quickly rotate the left analog stick in a complete circle before pressing one of the trick buttons. I sometimes find rotating the stick a couple of times helps though it's not necessary. From there, it's about where you've jumped from and when you release the trick button.

I think pressing up+right+down+left+up does the trick, just like the direction your joystick rotates when using one.
