1. Super Mario Bros 3 (NES)- The classic side-scrolling Mario games... man back in my day, we didn't have 3-D Mario. that N64 garbage can go back to where it came from. This was an improvement over SMB1 (#2 was whack. nothing like the first) with big stages, the ability to pick up shells, go backwards on the stage, earn items (with mini-games) and use them to help you on your way. Man I love this game. I still have it for my NES.
2. Super Street Fighter II (SNES)- a lot of you may be scratching your head here, but a lot of my childhood consisted of playing this game or others in the Street Fighter series and I gotta say this is the best fighting series ever.
3. Super Mario World 2: Yoshi's Island (SNES)- When you think that they can't go anywhere after SMW, they do. intense mini-games vs. Bandit and inovative game play keeps this classic series rolling.
4. Double Dragon II (NES)- this is THE classic side-scrolling beat 'em up game. you can pick up weapons that enemies drop and use it against them
5. Yakuza (PS2)- yeah, it has its bugs and limitations, but honestly I have ever been so immersed (read: addicted) to an adventure game. The story isn't terrible and it's enough to keep things moving along and the fighting in this game is crazy. I like the different weapons you can use as well as using the environment to hurt opponents. as you can tell, I like weapons.
Honorable mentions: Hitman: Blood Money (PS2)- If the replayability factor was bigger, it would be up in the top 5. You won't be able to appreciate the little nuances and details in this game playing it only 1 time through.
Goldeneye 007 (N64)- The game to have for N64. The one that started the FPS craze, imo.
Super Mario Kart (SNES)- The best [kart] racing game ever. period.
note: yes, the top games are on older systems. they get brownie points for nostalgia.
